Le Palais
Le Palais is one of the most famous restaurants in Taiwan, having won a Michelin 3-star award for seven consecutive years. It transforms classic Cantonese cuisine into a deeply refined, almost theatrical dining experience.
One of the most famous dishes in Le Palis requires a reservation beforehand. The chief uses Cherry Valley ducks from Yilan for his Cantonese-style crispy-skin roast duck and Peking duck four ways. The server will drip the alcohol down the duck to bring out the flavor of the duck more.
This is a good opportunity a lot of people will take to record the duck on fire. There is a lot of dim sum to choose from, one of their most famous dishes is Le Palais’ Shrimp Dumplings, as biting into one reveals a snap — the hallmark of perfectly cooked shrimp —
followed by a burst of natural sweetness. It’s a dish so familiar in Cantonese dim sum culture, yet at Le Palais it feels elevated.
The tea service is as deliberate as the food. There is a wide variety of teas served in the restaurant, and each is carefully selected to pair well with all the dishes. The very talkative server, who has been a server in Le Palais for a long time, recommended the Oriental Beauty Tea from Taiwan. The flavor is very delicate, pairs well with the dishes, and is good drinking straight up.
The environment is excellent, especially if you reserve a Private dining room, where you don’t even need to leave the room for the restroom. It is an excellent room for private conversation. It is also great for having a family for New Year’s, as during that time, the restaurant fills up fast. Make sure you reserve well in advance to ensure a spot for the famous Peking duck four way.
