Taïrroir
Taïrroir is the world’s first gourmet restaurant to earn three Michelin stars for its Taiwanese ingredients. Taïrroir, formed by combining “Taiwan” and the French word “terroi” (pronounced tehr-WAHR), is a French term meaning “land/soil,” but in food and wine, it means the sense of place.
When dining at Taïrroir, you can see Chef He in the kitchen through the glass display case. He’s focused and serious, meticulously overseeing each dish. The chief works hard, as evidenced by the stain still on his apron when we ask for a photo with the chief.
At Taïrroir, the experience feels both theatrical and intimate, the building carrying subtle textures that echo the restaurant’s fusion of Taiwanese heritage and French refinement. The dress code for Taïrroir is smart casual. Gentlemen are not allowed to wear shorts, tank tops, sandals, or flip-flops. Ladies are not allowed to wear flip-flops or high-heeled flip-flops (the heels must be covered or laced), and sports shorts are strictly prohibited.

There are two sets of seasonal menus at Taïrroir. Lunch is from NT$5,880 + 10%, and dinner is from NT$8,880 + 10%. Taïrroir is very similar to Banbo, which is a Michelin 1-star restaurant focusing on using familiar Taiwanese food to make a fine dining experience. Taïrroir transforms Taiwanese cuisine into fine dining in a way that both honors its deep-rooted traditions and embraces modern culinary artistry.
The reviews of Taïrroir on the Internet show that many people love the service they provide, as they show their good service when one enters the restaurant. Also, people said the restaurant has a modern and stylish design with warm lighting and comfortable seating. A highlight of the restaurant is the huge glass window, which allows diners to peek into the bustling kitchen, creating a charming “chef’s table” atmosphere.
